Step-1

In a large bowl, sift together 500g plain flour, 2 tsp salt and 7g sachet of fast-action yeast.

Make a well in the centre, then add 3 tbsp olive oil and 300ml water and mix well. If the dough seems a bit hard, add 1-2 tbsp of water to it and mix well.

Tip onto a lightly floured work surface and knead for about 10 minutes.

Once the dough is satin-smooth, place it in a lightly oiled bowl and cover with cling film. Leave to rise for 1 hour until doubled in size, or refrigerate overnight.

Line a baking tray with baking parchment. Knead the dough back (expel the air and pull the dough on itself) then gently mold the dough into a ball.

Put it on a baking parchment for another hour until doubled in size.

Preheat the oven to 220C/Fan 200C/Gas 7.

Dust the loaf with a little extra flour and with a sharp knife, score about 6 cm from the top of the loaf. Cut out the long cross.
